Nevertheless the drop in the number of cases of food poisoning which might have been expected to result from these advances has been disappointing taking the country as a whole. Housewives and caterers cannot be reminded too often that meat, particularly meat in processed and made up recipes is the vehicle of infection in more than three quarters of outbreaks where the cause can be found. Cooling and refrigeration of cooked meat which is to be used again is the first defence against infection, and the second, and equally important, rule is - wash your hands before handling food and after using the lavatory.
