![Public Analyst certified the addition of f)% of water and the vendor, who was a farmer in the area, was prosecuted but tha justices dismissed the case. In addition to the I0.’5 samples of milk analysed by the Public A4ialyst duriii!^ the year, 28 sam])les of milk, taken from Schools, etc., in the area, were tested in this Office by the In- spectors. The Scliool milks were all genuine and of goofl (luality. One informal sample of j)ork sausages was certified to be slightly deficient in meat and the butcher who manufactured and sold them was visited and cautioned. A short time after the Inspector’s visit another sample of sausages was taken from this butcher and he had apparently put the matter right for these proved to be up to the standard. All other samples were certified by the Public Analyst to be genuine and free from all prohibited preservatives and colouring matter. FOOD PREPARATION ROOMS. There are 78 premises where food is prepared and stored, an increase of 4 on the previous year. 1163 visits were paid and the standard of cleanliness and management is well maintained. BAKEHOUSES. The total number of bakehouses on the register is 36. During the year 2 premises were discontinued as bakehouses and 1 premises registered. 102 visits were paid and all premises were found to be clean, the limewashing and painting carried out in accordance with the regulations. FISH AND CHIP SHOPS. There are 83 premises in which the trade of Fish Frying is carried on, 1 premises having been discontinued during the year. The premises and the fittings are well maintained and comply with the Clean Food Regulations. ICE CREAM. There are 136 persons registered to store and retail Ice Cream, 11 having been registered during the year, and 12 having discontinued. 55 samples of Ice Cream were submitted fur bacteriological examination, all of which were found to comply with the standard laid down. MILK REGULATIONS, 1949, During the year 39 Retailers’ Licences and 8 Supplementary Licences were issued by the Council under the above Regulations. WATER SUPPLY. 82 Samples of water have been submitted for bacteriological analyses during the year.
