    None of these recipes require any great outlay, and I have been careful not to give any very rich or complicated dishes. I have also tried, as far as possible, that much cooking over the fire should be avoided, I hope that when anything has to be fried, great care will be taken, for if the least drop of water has got into the drip- ping or lard which is used, it will splutter when heated, and may cause a painful burn. My chief aim has been to.give no recipe which a child could not be trusted to carry out with a little supervision. In giving recipes for soups, I have had some difficulty, as of course the secret of good soup is well-made stock, and this can only be procured by constant attention and care, which is impossible in the case of children. I have, therefore, taken it for granted that the cook will supply the stock ready made; but there is no reason why
