No text description is available for this image![SPECIAL PREPARATIONS. Peptonized Milk.—Put J pint of fre.sli milk and 1 gill of water into an enamelled saucepan. Heat up without actually boiling (140° F.), then pour into a jug containing 2 fluid drachms of liquor pancreaticus and 20 grs. of bicar- bonate of soda. Cover the jug with a lid or flannel, and keep in a warm place for 1 hour. At the end of that time bring the milk to the boil. Fairchild’s Zymine powder can ahso be used. Whey.—To a pint of fresh milk (which has been warmed to about 100° F.) add 1 teaspoonful of essence of rennet. Fet it stand before the fire until the curd sets; then break up the curd. Allow to stand hour, then strain and heat the whey to boiling point. Barley Water.—Put a small tablespoonful of well- washed pearl barley into a pint of cold water, simmer .slowly down to §rds of a pint, and strain. Alhtimen Water.—Take the whites of 2 to 4 eggs and mix with a pint of cold sterile water by shaking well together. This may be flavoured with a little lemon juice or cinnamon water and sifted sugar. Imperial Drink.—Dissolve 1 large teaspoonful of cream of tartar in 1 pint of boiling water. Add oil of lemon (3 minims) or lemon juice and a little sugar. Razv Meat Juice.—Take 1 oz. of finely shredded beef or mutton and 1 tablespoonful of cold water. Put the meat into a jar, and stand in a warm place for 1 hour; strain and serve in coloured glass.
