The ice cream v;as from a bulk supply in a can kept in an ice cream conservator. This illustrcvtes again how impor-tant it is for all concerned to take all precautioi^s during the sole of loose ice cream to avoid external contamination from all sources as well as ensuring that the utensils for serving ice cream are kept clean .and treated writh suitable sterilising solution o.t all times. Good relations have again been maintained in all cases, and copies of the Laboratory Reports as in previous yeai-s have been supplied to the people concerned. iiLthough there ai-e 5 premises reginrerea for rriunufacture, at only one of those prendses W'us ice ci-eain riiade. lliilst 133 pi'eimLses are registered for the sale of ice creomi, at only 9S of these preiidses v;as ice creain sold. (l) Shellfish Visits were made at approxiirmtely monthly intervals to the Shellfish Factor^ at the Locks occupied by Ilessrs. Lxe Shellfisti Limited.
