    Ireland. That from Australia was sold as golden wattle — honey, and that from the West Indies as belle flower. The varieties most prized in this country are heather and clover. I think most people will agree that comb honey always appears to be more delicious than that which has- been extracted. It is translucent and generally pale golden yellow in colour, although medium grades are very much darker. Generally speaking, darker honey and that of more decided flavour can be bought more cheaply, but this is not always the case, and in some districts there 1s a demand for that of the darker shade. Everyone know that honey is obtained fregn the flowers of plants and trees, but it is not so generally ‘known that the nectar, or sweet fluid, sucked from the flower by the bee has not the same chemical com- ‘position as honey. An enzyme, or natural ferment, in the intestine of the bee, actually changes the nectar ; into honey. _ In addition to sugar, honey also contains mineral Batter varying from ‘15-3 per cent., and from 10-20 per cent. water, also a trace of Vitamin B, Honey is more easily digested than cane sugar, for it is a form of sugar which can be absorbed readily into the bloodstream. It is therefore a very suitable food to take after strenuous exercise or great exertion. _ Those who are lucky enough to possess bees, and who live in districts where both wild and cultivated ‘flowers abound, will probably be interested to try some of the recipes Nehieh follow. Those who do not pro- duce this delicious product at home, and appreciate its flavour, are advised to buy the less expensive variety for cooking purposes and beverages.
