Dealers who are not producers are covered by licences issued by local authorities under the Milk (Special Designation) (Raw iMilk) Regulations, 1940, but producer-retailers are I'egistered direct by the Ministry’ and may sell their milk to the public from premises where it is produced which are unknown to the local authority Pasteurised and Sterilised Milk. Twenty licensed pasteurising plants were taken over from the County District Authorities 0)1 October 1st. There is only one establishment where milk is sterilised and as this is a new designation a licence was issued to cover this plant. Generally speaking, premises and 2dant have been found siitisfactory. The floor space of several of the premises is becoming congested owing to increasing tr:ule and the installation of new bottle washing and lU'ocessing machinery. Ajrart from the fitting of Indicating and Recording thermometers to register the heat .to which the milk has been raised and maintained, such tliermometers are now required at the cold milk outlet—(the milk after heat treatment has now to be cooled immcdiiitely to 5()°F. or below). These thermometers are normally fitted to ll.’l’.S.T. plants, or can be fitted, to obtain representa¬ tive readings.) On capillary or open type coolers the answer to the problem is a little more diffi¬ cult. However, a sketch shewing !i suggested method has been circulated to those confronted with the pi'obhmi, which, if adopted, w 11 ovaicome the difficulty. There is some delay in delivei'y of thermometers but it is lioj^ed that orders will be met and the instruments fitted in the ensuing nine months.
