ARTHUR NEWSHOLME, Medical Officer, December, 1914. ScorpE OF THE INVESTIGATION. Three methods of preservation of milk as practised at fs factories situated in England were under investigation, viz. A. Manufacture of sweetened condensed milk. (Hasory Nix Vv) B. Drying of milk over heated revolving cylinders. (Factories X and Y.) C. Drying by spraying the milk into a current of hot air. (Factory Z. _ The main objectof the first set of experiments, conducted nee the year 1910, was to ascertain whether tuberculous cows’ milk was stall capable of conveying tuberculosis after being treated according to methods A and B. In the second set of experiments, carried out during the year 1911, special attention was paid to the general effects upon the bacterial contents of milk which followed the use of methods B and C.* I. GENERAL OUTLINE OF EXPERIMENTS. First set of experuments—Tuberculous cows’ milk was con- densed at Factory V and dried at Factory X, where the methods A and B were practised on a commercial scale. This tuberculous milk was treated exactly as any other milk would have been treated. Samples of the milk were taken before, during and after treatment, great care being taken to guard against any accidental contamination. * The reports upon these experiments were completed in 1911 and 1912, respectively, but their publication has been delayed pending the making of some intercurrent inquiries.
