$Gocd Hints.-—Cakes will not stick to their tins if placed on a damp cloth when removed from the oven. When making fruit pies, damp the edge of the pastry with milk instead of water—it holds better, and the juice is not so liable to boil over. In making a crust of any kind, do not melt the lard in the flour. Melting will injure the crust. _ Yea Cakes.—Rub 3 02. butter or lard into 21bs. flour; dissolve 1 oz. yeast in a little warm water, and pour it into the centre of the flour; sprinkle salt round the edges, and allow it to sponge for a few minutes, then knead, and add more warm milk, 2 0z. sugar, and 2 oz, cutrants, Allow it to stand in a warm place to rise for one hour or longer, Make up into tea cakes, place on greased tius before the fire for about ten minutes, and bake in a hot oven. “Fruit Pie.—See that the fruit is clean and picked free from leaves or stalks. Wet the edges of the dish, lay on a strip of paste and press it lightly to the dish. Put in the fruit, add sufficient sugar to properly sweeten. Then wet the top of the strip of paste, roll out the pastry for cover or lid; lay it gently on, press lightly to make it stick to the other, Cut round the edge of pie to make it look neat, and bake in a hot oven, Treacle Pies.—Line some deep plates or saucers with short pastry (see recipe for Short Pastry). Pour in some treacle, rub some stale bread ona grater into fine crumbs, rub ground ginger in with the crumbs. Put a thick layer or coyering of crumbs over the treacle. Ornament the tops with the pieces of paste that have been cut off edges of the pies. For one pie made in a: breakfast saucer, use 2 oz. flour, 1 oz. lard, }-tea- spoonful of baking powder, pinch of salt, 14 teaspoonsful of treacle, 4-oz. crumbs, and half-a-quarter of a tea- spoonful of ground ginger.
