    this portion of water should be poured away, and the remainder, after melting, be subjected to analysis. Or the fragments may be placed in a large funnel covered with a plate of glass until 5 or 10 per cent has melted, and the remainder be then transferred to the wide-mouthed bottle without touching the ice with the hands. Since even the best of ice is liable to have bits of organic substances frozen into it here and there, the albuminoid am- monia should be determined also in the water which has been filtered through paper. It must also be remembered that the ice which is sold for family use often is partly snow ice, and that the snow, in falling, always brings down ammonia from the atmosphere.
