![canteens, butchers’ shops, bakehouses and all grocers em- ploying sufficiently large staffs. Sinks have been provided where equipment is used; unsatisfactory working surfaces have been covered with impervious material (usually of the “Formica” type); adequate clothing accommodation has been provided and smoking in food premises is rarely encountered. The response by traders has been favourable. They had been circulated with details of the main provisions of the regulations before an inspection of their premises so that they would know what might be required. There have been instances of hostility, but these are invariably associated with the less progressive premises and eventually compliance is obtained without resort to formal action. Two important improvements which have not yet been tackled are the abolition of the open-fronted shop and the storage of food for immediate consumption. In both’ cases we are awaiting a legal decision arising perhaps out of a test case. This we shall have to leave to a larger and more affluent authority. To summarise then, the regulations are being applied with gratifying results. On the whole the trade regards them as necessary and is doing its best to comply.
