![[CE CREAM AND iCED LOLLiPOPS During the year 222 samples of ice cream and 65 samples of iced lollipops were submitted for bacteriological examination. 6 samples were considered unsatisfactory, o of which were traced to [1) defective refrigeration (2) accummulation of milk stone in equipment and (3] to a l)atch of ice cream which had not been pasteurised properly. Explanations of the unsatisfactory remaining 3 samples could not be found. The large number of soft ice cream vendors now in operation throughout thefBorough — each machine on the vehicle reciuiring daily cleansing and sterilisation — has resulted in some con- siderable time being devoted to their surveillance. S^^ot checks by stripping the machine on the vehicle after the operators have just cleansed the steriliser may not make members of the staff popular, but is a control over standards. This, with regular sampling, and notification to the operator of the results, good or ])ad, is having the desired results.
