    for 6 people 12 oz. short crust pas- try (see page 29) 1 Ib. fresh fruit =‘ (red or black currants, raspberries, damsons, or any other small fruit in season) 4. oz. sugar (Only 6 oz. short crust pastry is required if the tart is not to be cov- ered) two. Roll out one half and with it line an enamel or fire- proof plate. Prepare the fruit, put it on the lined plate with the sugar. Wet the edges of the lining. Roll out the rest of the pastry, and cover. Bake in a hot oven for 4o to 50 minutes. Dust with sugar and serve. Remember—1z2 oz. of pastry means pastry made with 12 oz. of flour. REGULO SETTING MARK 6. ‘TEMPERATURE 425° F, MEN CE Method.—Mix the pastry, and, if it is flaky pastry, set it aside to cool. Roll out thinly, cut in rounds, and on half of these put a spoonful of mincemeat. Wet round the edges and cover with the second piece of pastry. Press the edges together.
