To 1 pint of new milk, take lard the size When cool add 1 tablespoonful of sugar, salt, the whites of 2eggs beaten stiff. % of a yeast cake, and flour to make a batter. Set this ina warm place to rise. When light make into a loaf and kneed 10 minutes- Let this.rise, then make into rolls; rub top over with melted butter and when light bake in a quick oven about 25 minutes. ,--Mrs. 8. G. Skinner. Baking Powder Biscuit. ‘1 quart of sifted flour; 1 teaspoonful of salt, and two heaping teaspoonfuls of baking powder; i large tablespoonful shortening (half lard and half butter) about 1 cup of milk, enough to make a soft dough. Mix very quickly, put on a poard, roll out and cut with. cutter. Bake in a very quick oven.—Miss Emma Thompson, ~ Indian Meal Gems. 2 tablespoonfuls granulated sugar; 2 cups sweet milk; 1 cup indian meal; 1% cups flour; 8 teaspoonfuls baking powder. Mrs. Jos. Brown. Johnny Cake. . sugar, 1 egg, 2 teaspoonfuls baking — powder, nearly % cup of melted butter;_ pinch of salt and niilk enough tomake as thick as cake batter.--Mrs. Palmer. Yeast. 12 good sized potatoes; 3 tablespoonfuls _ spoonfuls salt; 2 compressed yeast cakes. Mash potatoes; mix flour, salt and sugar to a smooth paste with boiling water; add this tothe potatoes, Thin; put in6 pints of hot water; when luke-warm add yeast cakes. Let rise over night. BREAD, Take 1 pint of this Pine for a loaf of bread. Warm to blood heat; add 1table- spoonful melted lard;mix into hard loaf. Put into baking tin; let rise once and | bake. Keep yeast in cool place in open fruit cans. This will make about 8 loaves of bread.—Mrs. George Manton. Kal Dolma,. A Swedish Dish. Take one solid head of white cabbage. Boil until half done. Take up and let drain until cold. Take beef or veal and chop until fine; season with pepper, salt, butter, cream and a pinch of sugar; work all together until well mixed. Then take the cabbage, cut off the large leaves taking out the head stem and in each leaf put a spoonful of the meat mixture. Shape into oblong-rolls, folding the cab- bage leaf all around, and lay carefully | down in the kettle in which is enongh — cold water to cover; add butter and cov- er the kettle. Boil slowly, basting often and turn when brown on one side,. Cook about 2hours. Take up and serve with brown gravy.-—-Emma Johnson. Rice Cakes. 1 egg, white and yolk beaten separately; % cup of milk; % pint of flour; % teacup of cooked rice; 1 teaspoonful of bakin powder.
