John Richardson was the first scientific writer on the process of brewing. ‘‘. . . he dwells on the utility of the thermometer and saccharometer in brewing, instead of determining quantities by rule of thumb, He was the first to bring to the knowledge of brewers the use and value of the saccharometer, as Combrune in 1762 had first recommended the thermometer.’’— D.N.B. Rare. : 182 Roll of accounts of Christopher Johnson, Clerk of the Kitchen to Lord Dacre, dated 1542. A vellum roll measuring seven by one foot, containing an account, (written in Latin), in detail of all the expenditure for provisions and wines for the household of Lord Dacre, a nobleman of the reign of Henry VIII. The Dacre family died out in 1552. This extraordinarily interesting document throws a vivid light on the economic conditions and general style of living of a noble household in the first half of the 16th century in England, and while a number of such documents have survived, there are very few in existence which give such detail information that is of interest to students of gastronomy.
