The eight adulterated samples contained the percentages of Total Mineral Matter and of Sand as understated :— Total Mineral Matter Silica and Sard Quarter per cent. per cent. taken. 18-25 13*2 2nd 11-54 7-3 3rd 10-0 5-5 2nd 9-2 4-5 1st 8-78 4-89 1st 8-28 3-6 3rd 8-02 3-78 1st *7-5 3-0 4th The samples all contained large proportions of husk. The percentage of Total Mineral Matter in the Genuine Black Pepper of commerce amounts to about 5 or 5 5 per cent ; 7 per cent, is taken as the extreme limit. An allowance of 1*5 to 2 per cent, is therefore made over the amount known to be contained by Genuine Black Peppers. The first-named case is now an unusually bad one for this Parish. The two samples reported as ‘'Inferior’’ contained undue proportions of Mineral Matter, from half to Iwo-thirds of which was sandy. In these cases the amounts of total Mineral Matter barely exceeded the limit of 7 per cent. WHITE PEPPER. The particulars relating to the four adulterated samples are as follows : — One (Ith quarter) contained at least 25 per cent, of added Starches, and an unduly high pro])ortion of Total Minei’al Matter fur White Pe}>per, namely, 2-(SG per cent.
