These are its advantages, and to the intelligent and practical Brewer we think they need no comment.” September 2^, 184t>.—“ After more than two years’ experience in the use of the IMashing Attemi’krator, we entertain the same opinion Ave formerly expressed.” N.B. Thomas and James Nash, Brewers, Chesham, Buclis, September 3, 1846. “ As regards the Mashing Attemperator, m’c have no hesitation in pronouncing it a valuable addition to the Brewery. We have been uniformly successful since it has been in operation the last two summers, in turning out a good article, and at the same time getting an increased extract.” ]\Ir. Marsden, Managing BrcAvcr to the Messrs. Nash, in a more recent letter says :— “ The Attemperator has great merits, as the Ale I haA’c brewed with it has been uniformly good; and in the hands of a skilful operator it will prove a valuable auxiliary to any Brewery.” XXXV.—From il/r. W. Nicholson, Maidenhead Brewery, Berkshire, Mareli 20, 1850, “ I am pleased to add my testimony to the Avcll-known merits of the Mashing Attem- perator ; I have noAV used it more than tivo years to my entire satisfaction ; and 1 am aware of no plan capable of producing so large an extract in so condensed a form.” XXXVI.—From Messrs. Bladon and WooncocK, Star Brewery, Old Brompton, London, February 23, 1850. “We have noAv had the Mashing Attemperator in use for two years and a half, and have much ])leasurc in saying that we have found it most useful, in giving not only a much larger quantity, but, what is better, an extract far superior to the usual method. 5Ve may also add, that we have been much astonished to find it keep in such good repair, and at such a trifling expense as it has done, considering the heavy work it has to perform.” XXXVII.—From ]\Ir. R. A. Lewis, Alarket Deejnng, Lincoln. “ Since I left the Star BrevA’ery, London, Avhere I used your Mashing Attemperator from the day of its erection, I have placed a copper steam pijie on the bottom of my Mash-tun here, as a substitute for the Patent Masher, in order to avoid an outlay; the fixed coil of ])ipe has, however, totally failed, and experience has shown me that 1 cannot get so large an extract by at least lO/icr cent., neither so pure, so sound, and so brilliant an artiede by some sbillingsper barrel; you will therefore oblige me by sending one of your last improved Mashing Attemperators of the following dimensions .... by train, as soon as possible.” XXXVIII.—From il/?-. II. N. Byle.s. Patent Steam Breicery, Gosport, Hants, June II, 1852. “ I have always approved of your Ma.shing Attemperator, in theory, and am happy to say practice with it does not alter my opinion. The invention does you infinite credit, and I sincerely Avish you the encouragement you deserve.” XXXIX.—JMr. John Baker. Manager of the Patent Steam Brewery, Starheck, “ Ilarrcjgate, Yorkshire, June 11,0^1132. “ Numerous have been the means resorted to for accomplishing uniformity of heat during the whole time of steeping the grist. In no one instance have I ever seen this desired object attained, until using your ingenious and valuable Mashing Attemperator. It certainly stands pre-eminent to every other mode of a])|)lying heat to the contents of a mash ! All practical BrcAvers possessing a knowledge of its mashing and heating, and consequent converting powers, Avill adopt it, and recommend its use. It is just tAvo years I have operated at Starheck Avith your Hot Masher and Steam Plant, during Avhich period I have given the whole process a studious examination, and am therefore cnal)led to record my decided opinion of its merits.
