For high-class cooking this oil is the best ti}i b medium in the world. Relishes. Norwegian anchovies. Anchovies in salt. 1 Pate de foie gras. 1 Caviare. Sardines. 1 Lax. Oysters. Cheese. 1 Sausages. These are not necessary, but a very small supply goes a lono- Wav Potted meats are far better made fresh, and a saving cook will always have plenty of fish, tongue game, or ham trimmings to keep up the supply. Parmesan cheese is a mistake; it never keeps fresh. Cornish sardines aie cliea], and do well for toast. Raisins. Currants. Apricots. Dried Fruits. Plums. Figs. Apple rings. Sultanas. Prunes. Almonds. Country raisins (munukhlia) do admirably. Dried apricots (lcoobdnee), plums (aloo bokhara), figs (unjeer), sultanas (kishmish), and almonds (budddm) may be had m every bazaar ; prunes, currants, and apple rings from home. The Californian-dried fruits are extremely useful, and infinitely preferable to those in tins. French peas. French beans. Vegetables. Mushrooms. Asparagus. Tomatoes. Truffles.1 The fewer of these the better; but these will be found the best, the tomatoes especially. 1 If expense is no object.
