Three wholesalers supply the bulk of the trade from warehouses within the district, the fish being cleaned and prepared before sale to the retailer. As in previous years, supplies of smoked fish and shell fish are prepared and sold to the retail trade. All the premises p.re of excellent construction and a high standard of cleanliness in maintained. The retail shops are all provided with refrigerated show cases and refrigerated stores and agamn this side of the trade is well conducted. Fried fish and chips are as popular a dish as ever, but it is in this branch of trade that one feels improvements o,re called for, particularly in the construction and use of preparation rooms. Other Foods. The Department exercised all possible supervision over food premises and shops and as in former years dealt with a considerable quantity of foodstuffs found to be unsound. Excellent co-operation was secured from the trade, retailers readily seeking assistance in dealing with unfit or doubtful coErnodities. The following articles were dealt v/ith either at the shop premises or v/ere brought to the office for inspection;- 103 lbs Liver 22 tins Corned Beef 471 lbs Boiled Ham 16 lbs Sausage 355 lbs Beef 18 lbs Pressed Veal 11 tins Tongue 27 tins Steak 10 tins Luncheon Meat 19 tins Other Meats 225 lbs Bacon 11 tins SaLmon 8 tins Other Fish 5 jars Mincemeat 3 jars Jan 5 tins Soup 15 tins Peas 59 tins tomatoes 7 tins Beans 2 tins Other Vegetab.i-^- 11 tins Fruit 9 tins Evaporated MilP 55 lbs Butter 16 lbs Cheese.
