    consult a patient with regard to food, due consider- ation should be given to individual taste. In the preparation of food it is a safe rule that nothing be made in large quantities, as invalids quickly tire of the same dish, and variety is there- fore essential. Inviting portions should be served, with due regard to the amount of nourishment contained in each. Grateful acknowledgments are due to those friends who have so kindly helped me with this little book, by sending recipes which they knew from experience to be successful, and also to those authorities who permitted me to use the results of their researches with regard to The Feeding of the Sick.
