![FOOD PRODUCTION The department's duties in this field cover many aspects; these are dealt with under separate special headings. A very important job was the supervision of killing and the inspection of meat at the Council's public slaughterhouse. 100% of all animals killed were inspected and the total figures of number of animals slaughtered, diseases found and parts or organs condemned are given in subsequent tables. In addition to the hygienic supervision, the management of the premises is controlled by the department and a table is given showing throughput of animals and income for the financial year April68/March 1969* It will be seen from this that there has been a continued reduction in the number of cattle and sheep killed and this is no doubt due in part to the after effects of the foot and mouth outbreak which occurred in 1967* Tbe shortage of such animals produced by the remedial methods of eliminating the outbreak resulted in a general increase in the price of beef and mutton and this of course was reflected in lack of demand for such meats. One consequence of this was the greater demand for pork, but this unfortunately did not fully counter-balance the loss of income on other animals.
