Not only are they mechanically altered, but they undergo great chemical changes being transformed into peptones, and in that shape, passing through the walls of the blood-vessels and entering into the circulation. Albuminoid.'?, and the peptones resulting from them, differ very widely. The albnnn'noid has a vei-y large molcular weight and is a highly colloidal hody. The peptone must have a much smaller molecular weight in- as much as it is diffusible. C'o7idmentx.~'Uni]cv the heading of condiments and stimulants \vc may enumerate the meat-extract known as Liebig's Extract, the various pleasant flavouring ma- terials arising from the action of heat on flesh meat, pleasant vegetable flavouring substances, as well as pepper, nmstard, and spices. These substances contribute in an indirect manner towards the nutrition of the body. Food, as has been jiointed out, docs not nourish so long as it remains in the stomach or in- testines, but only after absorption ; and the manner in which condiments and stimulants contributes toward.^ nutrition is by promoting digestion and absorption. A.s a rule veiy minute quantities of these substances are required in order to accomplish thcii- work, and larger quantities act in a con- trary sense.
