    CHOCOLATE CREAM Ingredients 4 ozs. of flour 4 teaspoonful of vanilla essence 2 ozs. of sugar i pint of water 1 oz. of cocoa Method.—Mix the flour to a smooth paste with a little of the water. Boil the rest of the water then add the flour paste as if adding custard powder. Cook quickly and stir for 5 minutes, then add the sugar and cocoa. Boil again for 5 more minutes. Turn into small wetted moulds and put them away in a cool place to set. , Serve with a teaspoonful of jam on top of each. CHOCOLATE CREAM TARTLETS Ingredients Regulo Setting Mark 6 4 lb. of potato short crust No. 1 1 level tablespoonful of House- 4 ozs. of smoothly mashed potato hold milk powder 2 ozs. of cocoa 1 teaspoonful of vaniila essence 14 ozs. of sugar Cold water 1 level tablespoonful of dried egg A little jam Method.—Line patty tins with thinly rolled pastry. Mix the potato, dried egg, milk powder, cocoa and baking powder together. Add enough cold water to make a smooth thick cream. Stir in the vanilla. Put a little blob of jam in each lined patty pan, drop a spoonful of the cream on the top. Cross with thin strips of pastry as in Congress Tarts. Bake in a moderately hot oven for 20-25 minutes. CHOCOLATE PRUNE PUDDING Ingredients 4 1b. of prunes 1 teaspoonful of cocoa 6 ozs. of flour 1 reconstituted egg 2 ozs. of dry mashed potato 4 teaspoonful of bicarbonate of 2 ozs. of cooking fat soda and a little warm milk 2 ozs. of sugar Method.—Soak the prunes until they are soft enough to allow the stones to be taken out and the prunes cut in pieces. Cream the fat, potato and sugar together, beat in the egg. Sift the flour and cocoa together and fold into the potato, egg and fat mixture. Stir the bicarbonate of soda into about 4 teacupful of warm milk and use it to mix the rest of the ingredients to a soft dough. Grease a pudding basin and line it with the cut prunes. Fill up with the mixture. Cover with a Margarine paper or inverted saucer and steam for 1 hour. If possible pour 2 tablespoonfuls of very hot syrup over the pudding before serving it.
