Over the past few years I have given details of survey v7ork carried out in all food premises and consequentia.1 improvements secured under the Food Hygiene RegidLations, This survey and its follo\7-up has been a major undertaking by the Department and by this it has been possible to achieve compliance v/ith the regulations covering the structural requirements of the regulations. In addition to these structural alterations, much v7ork has been done to ensure that food handlers make proper use of the facilities novj provided and maintain the requisite standard of food hygiene. This, unfortunately, is not easy and I feel that much v;ork is still necessary in regular routine inspections and visits in order to ensiire that there is no relaxation of standards. No serious contravention of the Regulations was found in I963 end there v/as no need for any prosecution. It is perhaps unfortunate that the results of this work are unobtrusive and it is only when failure of proper hygiene results in an outbreak that the piiblic at large become conscious of the problem. Market Hall In this field I am happy to report the completion in 19^3 of the scheme for provision of v/ashing fa,cilities to all food shops and stalls. It \;ill be remembered that some grumbles v/ere heard from some market tenants when the scheme wa.s proposed, but since its completion I understand tha.t the majority of the tenants are very pleased v/ith the greater convenience of having washing facilities available close at hand. MEAT INSPECTION Meat Supplies The fl*esh meat supplies of the tovm during 19^3 continued to be obtained in a large proportion from the wholesaler who operates at the Council’s public slaughterhouse.
