Ihe vendors of these samples were small shopkeepers, and only sold from two to four quaits per day. They were summoned to appear before the Health Committee and cautioned as to future procedure. Control samples were purchased subsequently from the farmers who supplied them, and the sample purchased (No 19), corresponding to No. 9, w,s found to be deficient 111 fat to the extent of 33 per cent. The farmer appeared before the Health Committee, and agreed to pay a fine of £1 Is. Od. No. 15 contained 12| per cent, of added water. The explanation given was that the vendor, a farmer, purchased a quantity of milk from another farmer, which he had reason to believe was not genuine. He was cautioned by the Health Committee, and agreed to pay a fine of £2 2s. No. 53 deficient m fat to the extent of 20 per cent No. 54 deficient in fat (o the extent of 10 per cent. No. G2 contained 9 G per cent, of added water. The vendors of these three samples were small shop¬ keepers, and appeared before the Health Committee and were cautioned.
