    solution are so balanced that, when added to the extent of 4 per cent. to the other edible oils in the margarine, the amount of vitamins in the margarine is equal to that of summer butter. All churnings of margarine from the factory are tested to make sure that the vitamins are present. Testing 1s carried out by the method outlined above, and also by examining the samples in ultra-violet light. Vitaminised margarine gives a characteristic fluorescence in this light, which is not obtained with non-vitaminised margarine. The above describes the process used in the factories owned by Messrs.
