![It will be observed that the average standard of these samples easily satisfies the requirements of the Food Standards (Ice Cream) (Amendment) Order, 1952. It is a fact that each individual sample met the required standards with ease. It is to be observed that, whereas during the last few years there has been a wide variation in the fat content of samples, an examination of the chemical test carried out from the present year’s samples has shown that there is a much greater uniformity. This is probably due partly to the falling off in the sales of locally made products and partly to the increase in the sales of nationally known ice creams, the composition of which is markedly uniform. Neighbouring local authorities in whose areas local manu¬ facturers have retailing agents have during the year followed their usual practice of sending notifications of samples taken of these products. It was found tha: that the persistent contamination was the result of a bacteria tra] in the gland of the homogeniser. Following recommendations inad'. by the department the manufacturer altered his method of packmi this gland and the trouble disappeared.
