![The pure crystallized carbolic acid must be used, or the ointment will change colour ; and the citrine ointment must be quite free from any excess of nitric acid. The carbolic acid is to be thoroughly mixed with the sulphur ointment first, and the citrine ointment rubbed in last—no heat is to be applied. Set the milk to stand in a fender, or over a lamp, until it is quite warm. When it is set, remove the rennet, break up the curd quite small with a knife, and let it stand for ten or fifteen minute.s, when the curd will sink. Then pour the whey into a saucepan, and let it boil quickly. Measure one-third of a pint of this whey, and dissolve in it, when hot, 110 grains of sugar of milk. When this third of a pint of whey is cold, add to it two-thirds of a pint of new milk and two tea- spoonfuls of cream, and stir. 'J'he food should be made fresh every twelve hours, and warmed as required.
