![,quor is fo boy led, as that only the Gafs may evaporate • little or no Confumption being made, Jt is by that means made more mellow and will extract more virtue out of the Malt’ if in a good temper put thereto, and then the Malt being in a Malh-tub, add fo much Liquor to it as is juft fufficient to wet it, and this is called Majhing ^ then row or ftir it up very well with two or three pair of Hands, ftiffty for half an hour together, till ’tis all mixed in every part •, then add in what quantity of Li¬ quor you think fit • but the ftiffer you Mafli, the better it is • then ftrow it all over with a little frefh Malt, and let it ftand an hour and a quarter, or thereabouts •, then let it off into its Receivers, and Malh again with frefh Li- tjnor, ano ict it ftand about an hour, rowing it up, as before faid-, fo a third time.- And fome will Malh a fourth time, which then muft not ftand above half an hour: But we fay that three times are fufficient ^ the fourth being ft poor and very fmalJ indeed, that ’tis fitter for Smad-bser for very poor People, than for a Diftillation; unlefs ’tis nfcd inftead of Liquor for other Maftings on frefh Malt. Now feme very Ingenious Perfons Boyl their Liquor and Cool in, the which we well ap¬ prove of. Now every Wort that comes is pump’d up out of the under Back into the Cooler, there to Cool-, and then from the Cooler into the Waft-backs, there to remain ’til] all the three Worts come together.
