Production of this type of ice-cream has increased considerably recently and presents problems not met with in the manufacture of ice-cream by the usual methods. It is made in the machine from which it is sold and, in most cases, this is in a vehicle. As the law stands there is no ability to require registration of these vendors as manufacturers. In general the vans are well-equipped with the amenities required for food-handlers (water, basin, soap and towel) and kept clean. The apparatus for making the ice- cream is dismantled at the end of each day and sterilised. In addition 19 Iced Lolly Samples were examined. There is no standard for the composition or bacterial content of this product but in all cases of unsatisfactory reports the manufacturer and the retailer were advised re precautions to be taken to prevent contamination.
