![The standard of hygiene in the eighty-nine premises which registered for the sale of ice cream has heen satisfactory. Ei^ity-four samples of ice cream were taken for routine examination, with the following results:- 6. 7. SLAUGHTERHOUSES AND KNACKERS* YARUS. The number of horse carcases received at the knackers’ yard at Heddington during the year totalled twenty-two, fourteen of these animals having been slaughtered on farms. Six slaughterman’s licences have been issued, all to men employed at the Heddington knackers’ yard. There are no slaughterhouse^ a.n the district, but we continue to have the one knackers’ yard at Heddington. - . In accordance with the Meat (Sterilisation) Regulations 1969} the practice of staining the raw flesh with green dye was discontinued, and everything is now sterilised by boiling until it is cooked. These Regulations vrere welcomed by all responsible people, because the practice of staining green so obviously failed to deal effectively with danger from raw diseased meat. A by-product of the animals is the large quantity of fat. This is rendered down by boiling, and stored in 40*-g3'llon drums for despatch to soap works. The smell of the fat being rendered, plus the smell of cool-ing flesh, is better avoided! Fortunately, the premises are reasonably isolated, the nearest dv/ellings being occupied by those employed ai, the knackers’ yard. Of late, we have been encouraging the o\mers to rebuild the premises, which have now outlived their useful life and should be replaced by a more modern building.
