    knowledge we possess with regard to the process of digestion, the chemical composition of food, the significance of the energy of the food and its relation to the energy output of man in the form of work and heat. These problems were attacked, however, almost exclusively with regard to the indi- vidual. The knowledge gained in their investigation served to enlighten the medical man in his dealings with his patients. Only in a few instances have the results been utilised for practical purposes connected with society as a whole or with large sections of the community. For example, the pre-war rations of our armies were fixed after a series of experiments on the food requirements of soldiers on the march. Again, in the valuable studies on poverty by Booth, Rowntree and others, full details are given of the diet of the poor and very poor, and deductions are made as to the sufficiency or otherwise of the earnings of these classes. For the most part, the provisioning of a nation has been regarded as an economic question to be solved by the laws of supply
