Description

Glossary of terms compiled from Eighteenth century English cookery-books. A list of the names used for the different joints and parts of animals. Author's holograph MS. Illustrated with four pen-drawings of joints of beef, mutton, etc. copied from 'The frugal housewife. 1823' by Susanna Carter. The last 13 ll. contain a list of French terms extracted from 'Le Ménagier' (Paris, 1846).
